    Chicken: Creole Chicken & Rice

    List of Ingredients




    (original recipe calls for 1/4 tsp salt)
    3/4 cup instant rice uncooked
    4 skinless boneless chicken breast halves
    1 can tomato sauce (8 oz.)-- no salt added
    1/4 cup chopped onion
    2 tbl chopped green pepper
    1 clove garlic chopped fine
    1/2 tsp dried basil
    1/8 tsp pepper

    Recipe



    * Place 3/4 cup water (and salt) in a small sucepan. Bring to a boil. Remove from heat, stir in the rice, cover and let stand 5 min. Keep warm while you make the chicken.

    * Coat a large nonstick skillet with nonstick cooking spray. Place over med. heat until hot. Add the chicken and cook until brown and tender, about 10 to 12 min., turning once. Add the tomato sauce, onion, green pepper, garlic, basil, pepper, and 1/2 cup water. Bring to a boil, cover, reduce the heat, and simmer 6 min., stirring occasionally. Serve with the rice.
