Chicken: Crockpot Chicken Ratatouille

1- 14.5 ounce can sliced stewed no salt added tomatoes
1- 8 ounce can of no salt added tomato sauce
1- 6 ounce can of no salt added tomato paste
2/3 cup of fresh or frozen onion
1 cup of fresh or frozen mixed pepper strips (red, green & yellow)
1 tsp Herbox Very low sodium chicken granulated bouillon (10 mg. sodium)
1 Cup water
1/2 tsp. each thyme, basil, oregano
1/4 tsp. each garlic powder, coriander, sage
1 bay leaf
4 boneless, skinless chicken breasts - cut into 3 ounce pieces uncooked
1 medium size eggplant skinned and cut into chunksRecipe
Put all the ingredients into the crock-pot, then turn it to HIGH for 4 to 5 hours, or on LOW for 8 hours. Walk away. Return and Enjoy!
