Chicken: Crockpot Oriental Chicken

3 pounds boneless chicken breasts, skinless
8 ounce can water chestnuts, sliced
1 cup fat free chicken broth
1/4 cup lemon juice
1 onion, chopped
1 Tablespoon minced garlic
1/4 teaspoon white pepper
6 ounce package pea pods, frozen
4 ounce can mushrooms, drained
8 ounce can tomato sauce (no salt)
2 teaspoons low salt soy sauce Recipe
1. Cut chicken into 1 inch strips.
2. Drain water chestnuts.
3. In slow cooker, combine chicken, broth, lemon juice, onion, garlic and pepper. Cover and cook on medium for 7 hours.
4. Increase heat to high, add remaining ingredients; bring sauce to boil, stirring constantly. Reduce heat to medium and let simmer while preparing rice.
5. Thicken with cornstarch and water if desired. Serve over rice.
