    Chicken: Curried Lime Chicken Satay

    List of Ingredients




    1 teaspoon finely grated fresh ginger
    2 cloves garlic, minced
    2 tablespoons fresh lime juice
    1 tablespoon low salt soy sauce
    2 teaspoons oil (for marinade)
    1 teaspoon curry powder
    1 1/2 pounds skinless boneless chicken breast cut into 3x1/2" strips

    Note: fresh lime juice is recommend; you can squeeze the limes and what you don't use immediately you can freeze for later use. Whisk together all ingredients except the chicken. Stir in the chicken pieces and marinate, in the fridge, for 2-24 hours. Stir twice while marinating to ensure that all the chicken comes in contact with the sauce.

    If broiling, line a baking sheet with nonstick foil; place the oven rack 4 inches from heat source. Preheat the broiler or prepare the grill. Remove chicken from marinade and thread the meat on 8 skewers. Set the kebabs on the baking sheet and place in the oven or place chicken directly on the grill. Cook for 3 minutes. Turn and cook another 2 minutes, or until done. (these cook very quickly).
