    Chicken: Favorite Lemon Chicken

    List of Ingredients

    9 ounces boneless skinless chicken breast halves grated zest of 2 lemons
    1/4 cup fresh or bottled lemon juice
    1/2 cup fat free low sodium chicken broth
    2 teaspoons cornstarch
    1 to 2 drops yellow food coloring (optional)
    1 tablespoon capers, drained and rinsed

    Recipe

    Place chicken, lemon zest and lemon juice in a skillet. Bring to a boil, then cover and simmer over low heat until cooked througha nd chicken is tender (turn chicken occasionally and add more lemon juice if needed). Remove chicken from the pan.
    In a small bowl, whisk cornstarch with chicken broth until well mixed. Add to lemon juice in pan and deglaze pan. Add food coloring if desired. Continue to simmer, stirring occasionally, until sauce thickens and looks glossy, approximately 2 minutes. Serve with capers. 4 Servings.
