    Chicken: Garlic Chicken Veggie Casserole

    List of Ingredients




    3 boneless, skinless chicken breasts (halved)
    1 c white vinegar
    1/2 tsp ground peppercorn
    3 tsp minced garlic
    1 yellow onion, chopped
    1 red and 1 green pepper, diced
    1 large tomato diced
    2c sliced mushroom
    1/2 tsp black pepper
    3 c cooked rice noodles
    8 oz pkg favorite veggie, thawed
    2 1/2 c low sodium, fat free chicken broth

    Place chicken in med. sized bowl with vinegar, peppercorn, & 2 tsp garlic. Cover and refridgerate 1-3 hours.

    Saute onion, mushroom, tomato, red & green pepper and remaining garlic until onion is clear. Add drained chicken and 2Tbl of marinade to pan. Saute chicken 3-4 minutes each side.Place chicken, broth, noodles, and veggies in 3 qt casserole dish. Cover and bake on 350 for 30 -45 minutes until chicken is done and veggies are tender.
