Chicken: Garlic Chicken on Rice

1/4 cup chopped onion
2 cloves garlic
1/4 cup lemon juice
2 tablespoons soy sauce, low sodium
1 tablespoon honey
2 teaspoons ground ginger
1 chicken breast half, skinned, boned cut in strips
1/2 cup chicken broth
1/2 cup uncooked instant rice
1 tablespoon chopped fresh parsley
1/2 teaspoon grated orange peel Recipe
In a small bowl, combine onion, garlic, lemon juice, soy sauce, honey and ginger. Add chicken; cover and refrigerate at least 1 hour. In a small saucepan, bring chicken broth to a boil. Remove from the heat; stir in rice, parsley and orange peel. cover and let stand for 5 minutes. Meanwhile, cook the chicken and marinade in a hot skillet until no longer pink. Serve over rice.
