    Chicken breasts (boneless and skinless), cut into small pieces
    onions, chopped
    green onions, sliced
    green peppers, chopped
    garlic, minced
    fresh ginger, grated or minced
    carrots, sliced on the diagonal
    celery, sliced on the diagonal
    Any other vegetable you have sitting around in the fridge!
    Chicken stock or broth
    1 tsp cornstarch (this is not a plan friendly ingredient)
    Chinese 5-spice mix

    Cook onions, green onions, garlic, and ginger in a non-stick pan first until still crunchy. Then add chicken pieces and cook until chicken is no longer raw. (Mine was already precooked on the grill, so I added it last after all the veggies were almost cooked to reheat and take on some of the flavor.) Add remaining vegetables and cook a few minutes. Take approximately 1 cup of the broth or stock (low- or no-salt added), add the cornstarch to the liquid to thicken it and the Chinese 5-spice, and add to pan. Cover and cook a few more minutes. Serve over rice.

    I also added more garlic powder and to my plate I sprinkled some Mrs. Dash spicy mix (or extra-spicy mix), as my husband hates spicy foods.
