    Chicken: Green Peppercorn Chicken with Apple

    List of Ingredients

    1/2 cup white wine
    1/2 cup low-sodium chicken broth
    3 tbl frozen apple juice concentrate
    2 tsp green peppercorns
    1 tsp poultry seasoning
    1/2 tsp granulated garlic
    (original recipe calls for 1/2 tsp salt)
    1/4 tsp nutmeg
    4 4 ounce skinless boneless chicken breast halves
    1 tart red apple
    1 tbl cornstarch (off plan)
    1/4 cup water
    1/4 cup red wine

    Recipe

    Combine first 8 ingredients in large skillet. Bring to boil. Add chicken breasts. Return to boil, reduce to simmer, and cook 10 minutes. Meanwhile, core apple but do not peel. Slice into 1/4-inch rings. Add to chicken to mixture and simmer 10 minutes. Remove chicken and keep warm. Mix cornstarch with water and wine. Stir into liquids and apple. Cook until clear and thickened. Pour over chicken breasts and serve.
