Chicken: Grilled Chicken & Shiitake

4 boneless-skinless chicken breasts
1/4 pound shiitake mushrooms
Black pepper
Any citrus juice (lemon lime, orange etc)
2 cups wild rice
4 cups water or chicken or vegetable broth
Parsley or Cilantro
1 Thin slices which ever citrus you use… Recipe
Rice, first wash and drain the rice – make sure that you get any twigs or stones out of the rice. Add rice and water together, cook on medium heat until done (about 30 minutes).
Chicken, wash and dry chicken breasts, trim away any access fat that may be on breast; wash and slice mushrooms about 1/8-in thick. In a bowl add pepper, citrus and chicken and let marinade for about 15 to 20 minutes. Heat your grill, it can be outside, in your oven, a George Forman or I use the Ronco Showtime Rotisserie (I own one of the small ones). Place your chicken on the grill or in my case in the largest basket, Set my timer for 30 minutes “And Forget IT”, no serious LOL, 10 minutes before the chicken is done, add your mushrooms and slices of citrus on top of the chicken breasts and continue cooking.
On a serving platter, fluff rice and mound it in the center, around the edges place your chicken/mushroom breasts, garnish with parsley or cilantro. (For a pretty display, add a piece of your citrus to the top of the mound of the rice.)
