    Chicken: Guilt Free Chicken Marsala

    List of Ingredients

    1/2 yellow onion, diced fine
    1/2-1 cup good mushrooms -- oyster, cremini, etc., diced
    2 small chicken breasts, cut into small strips
    3/4 cup marsala cooking wine
    1/4 cup water
    Spices to taste -- rosemary, pepper, paprika or any favorite spice blend
    1-2 tbsp balsamic vinegar

    Recipe

    Saute onions in a little water on med hi, add brown mustard seeds if you have them (gives a nutty flavor). Add chicken and brown a little. Add mushrooms, water, marsala and balsamic, and any spices you prefer (doesn't need much). _Let heat up, then turn down to med/low to simmer for 10 minutes or so until chicken is done. Ê

    At this point, remove the chicken if you want to weigh out portions, turn sauce to med-hi or hi and let it boil a bit until it is reduced to the consistency you prefer. _Mix your chicken portion and sauce and serve over rice.

    For this, I cook rice in low salt chicken broth (canned), with chopped up spinach. I recommend a rice cooker if you don't have one, they are superb for cooking any kind of rice, and you can store the inner container in the fridge.
