    Chicken: Healthy Fajitas

    1 lb. boneless, skinless chicken breast (cut into 1-inch strips)
    3 Tbsp. lime juice
    1/2 tsp. chili powder
    1/2 tsp. ground coriander
    1 onion, quartered
    1 green pepper, sliced into strips
    Salsa, chunky - made from cards

    Recipe



    Combine lime juice, chili powder and coriander and pour over chicken breast. Refrigerate for 30 minutes. Add vegetables to chicken and toss well. Add chicken and vegetables and stir-fry in non-stick pan or wok until done. Serve warm with salsa.
