1/2 �cup white wine
2 �tablespoons chopped fresh mint
1 �tablespoon extra virgin olive oil
1 �teaspoon chopped fresh thyme
1/4 �teaspoon ground black pepper
2 � (4-6 oz.) fresh boneless, skinless chicken breastsRecipe
In a medium bowl combine wine, mint, oil, thyme, and pepper. Add chicken and marinate in the refrigerator for 4 hours, turning every hour.
Preheat broiler. Pour water in the bottom of broiler pan to a depth of 1�4-inch. Discard marinade. Place chicken breasts on broiler rack over water and broil for 12 to 15 minutes. Turn chicken over and broil for 5 more minutes.*

No matter what method you use for cooking chicken, the most accurate test for doneness is a meat thermometer. Since chicken is never ready to be served until it is done, always be sure it is completely cooked. Whole or bone-in chicken should reach an internal temperature of 180�F, and boneless chicken should be cooked to 165�F.
