    List of Ingredients




    2 Tablespoons white wine (not sweet variety)
    1 Lb Chicken Breasts, skinless, cut into 1" cubes
    1/2 Medium Onion chopped well
    2 Tablespoons minced garlic
    1 Red, Yellow or Orange Bell Pepper (diced large)
    4 Fresh Tomatoes-Chopped
    2 Tablespoons tomato paste (no salt added)
    1 1/2 Cups long grain rice
    3 Cups chicken broth (low fat, so sodium)
    1 Tablespoon Lemon Pepper Seasoning -no salt added
    1 Teaspoon red pepper flakes
    1/4 Teaspoon SAFFRON threads.
    3 Tablespoons fresh Parsley (chopped)
    3 Tablespoons of lemon or lime juice
    1 LB Large Shrimp, raw, peeled with tail on, and butterflied.

    Recipe



    Heat wine in large, deep, fry pan. Add chicken chunks and cook 7-8 minutes, stirring until outside pink is gone.

    Remove chicken chunks from pan. Set aside.

    Add onion and garlic to the same pan and cook for 2 minutes, add Bell Peppers and cook for 3 minutes.

    Add fresh tomatos and tomato paste and cook for another few minutes stirring.

    Add long grain rice, chicken broth and spices. Bring to a boil.

    Return chicken cubes to pan, cover pan, turn heat down to low, and cook for 25 minutes.

    Remove cover, stir well (removing rice from bottom of pan if sticking a bit), add Shrimp, stir shrimp in to mixture. Replace cover and cook for another 10 minutes on low.

    Turn off heat, remove pan, leave cover on top and let pan sit for 10 minutes. Serve

    This one is really worth making. It's very good and satisfying.
