    Chicken: Lemon-Mustard Chicken

    List of Ingredients




    2 to 2.5 lbs Chicken Breast
    1 Tbsp No salt Stock or Dry White Wine
    1 Tbsp Dijon-style mustard
    1 Tbsp Lemon Juice
    1.5 Tsp Lemon-pepper seasoning (or 1 tsp lemon rind 1/2 tsp black pepper)
    1 Tsp Dried Oregano or Basil crushed
    1/8 Tsp Ground red pepper

    Recipe



    1. Rinse Chicken; pat dry. Place chicken on unheated rack of broiler pan (spray with non-stick cooking spray if you are nervous about sticking but remember NOP*). Broil 4 to 5 inches from heat about 20 min or till lightly browned.
    2. Meanwhile, for the glaze, in a bowl, stir together mustard, stock/wine, lemon juice, lemon-pepper seasoning, oregano or basil and red pepper. Brush chicken with glaze. Turn chicken; brush with remaining glaze. Broil for 5 to 15 min more until chicken is tender and no longer pink.

    Serving portions will vary with Body Type and Meal Plan used.
