Chicken: Lemon Oregano Chicken

2 pounds chicken pieces, skinned
(original recipe calls for) 1/4 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, minced
1 lemon, thinly sliced
1 tomato, peeled and chopped
1/4 cup chopped onion
1/4 cup snipped parsley
1 teaspoon oregano
1/8 teaspoon cayenne pepper
1/4 cup dry white wine
3/4 cup chicken broth
1 green bell pepper, cut into strips

Sprinkle chicken pieces with (salt and) pepper. Spray a large skillet, with non-stick vegetable spray; add chicken pieces. Cook, turning occasionally, for 15 minutes or until browned evenly. Reduce heat. Place garlic, half the lemon slices, half the tomato, onion, parsley, and oregano on top of the chicken. Sprinkle with cayenne. Add wine and broth. Cover and simmer for 15 minutes.
Add remaining tomato and green and red peppers; cook, covered, until chicken is no longer pink. Transfer chicken and vegetables to a serving platter; garnish with remaining lemon slices.
