Chicken: Lemon Oregano Chicken

2 pounds chicken pieces, skinned
(original recipe calls for) 1/4 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, minced
1 lemon, thinly sliced
1 tomato, peeled and chopped
1/4 cup chopped onion
1/4 cup snipped parsley
1 teaspoon oregano
1/8 teaspoon cayenne pepper
1/4 cup dry white wine
3/4 cup chicken broth
1 green bell pepper, cut into strips

Sprinkle chicken pieces with (salt and) pepper. Spray a large skillet, with non-stick vegetable spray; add chicken pieces. Cook, turning occasionally, for 15 minutes or until browned evenly. Reduce heat.� Place garlic, half the lemon slices, half the tomato, onion, parsley, and oregano on top of the chicken.� Sprinkle with cayenne.� Add wine and broth.� Cover and simmer for 15 minutes.
Add remaining tomato and green and red peppers; cook, covered, until chicken is no longer pink.� Transfer chicken and vegetables to a serving platter; garnish with remaining lemon slices.
