Chicken: Lemon Shallot Chicken

List of Ingredients
1 sm Chicken stock cube, crumbled
1 c Water
1 Clove garlic, crushed
4 chicken breast fillets
1 1/2 tb Lemon juice
6 Green shallots, chop'd fine Recipe
Combine stock cube, water and garlic in frying pan, bring to the boil, add chicken, reduce heat, simmer until just tender (or microwave on HIGH for about 6 mins). Remove chicken from pan.
Add lemon juice to pan, boil until mixture is reduced by half (or microwave on HIGH for about 3 mins), stir in shallots, serve over chicken.
