    Chicken: Magic Tasting Chicken Breasts

    List of Ingredients




    2 tbl tarragon vinegar
    1/4 cup apple juice
    1/4 cup Madeira Wine
    1 med onion coarsely chopped
    2 tsp minced garlic
    1/2 tsp dried savory crushed
    1/2 tsp ground ginger
    1 tbl minced parsley
    1/2 tsp grated lemon rind
    1 1/2 lb boned and skinned chicken breast halves 1/4" thick

    Recipe



    Use heavy bottomed saucepan or kettle Combine all ingredients except chicken and pimento in heavy bottomed saucepan or kettle. Bring to boil. Reduce heat to simmering. Cover and simmer for 5 mins. Wash and dry chicken. Add to sauce, turning to coat. Bring sauce to simmering point again, spooning mixture over chicken. Cover and simmer for 15 mins. Transfer to warmed serving plate. Strain sauce, pressing out juices. Pour over chicken.
