Recipe Introduction
From member Firemans Wife: Prepare all of your ingredients first, the cooking goes really fast and only takes a few minutes. Do keep the ingredients separated because they take different amounts of time to cook. Feel free to add or subtract ingredients based on preference and availability. This is a recipe which could easily double, triple, etc. to share with the family or guests.
List of Ingredients
* 1/4 large onion, rough chopped
* 1 clove garlic, rough chopped
* 1 small yellow squash, rough sliced
* 1 handful fresh kale, rough sliced
* several raw green beans, snapped into bite size pieces
* 1 serving raw chicken breast, cut into bite size pieces
* 1 handful fresh spinach, rough sliced
* 1/4 green bell pepper, rough chopped
* 1 serving leftover rice (brown, white, etc.)
* 4 or 5 cherry tomatoes, cut in half
Liquids --
* white wine - several tbsp.
* balsamic vinegar - 1-2 tsp.
* sodium free chicken broth - 1/4 cup - give or take
Spices * I used black pepper, powdered garlic, and 21 Seasoning Salute - to taste
Recipe
Note: At any time during cooking, add the liquids as needed to saute the ingredients.
Heat a non-stick skillet to medium heat. Add ingredients, 1 or 2 at a time, in the order listed; stirring constantly, allowing each addition to start to cook before adding the next ingredient. When all ingredients are in the skillet, season with the spices and allow to cook until chicken is cooked thru and liquid is absorbed. Serve immediately for best flavor.
