Chicken: Orange Ginger Chicken Stirfry

List of Ingredients
2-tablespoons water, divided
1-pound boneless, skinless chicken breast, cut into thin strips
1-cup red bell pepper, cut into strips
1/2-cup fresh pea pods, cut in half crosswise
1/4-cup sliced green onions
1-tablespoon grated fresh ginger root
1-large clove garlic, crushed
1/4-teaspoon crushed red pepper (optional)
2/3-cup reduced-fat, low sodium chicken broth
1-tablespoon low sodium soy sauce
2-teaspoons cornstarch
1-teaspoon low sodium dark sesame oil
1-teaspoon grated orange rind
Hot cooked steamed rice (optional)Recipe
Heat 1 tablespoon of water in large skillet over medium-high heat. Stir-fry chicken strips until no longer pink. Remove chicken from skillet. Heat remaining 1 tablespoon of water in skillet. Add the red pepper, pea pods, green onions, ginger, garlic and crushed red pepper. Stir-fry the mixture 3 to 4 minutes until vegetables are tender crisp. Combine the chicken broth, soy sauce, cornstarch, sesame oil and orange rind until smooth. Pour the broth mixture into skillet. Cook and stir over medium heat until thick and clear. Add the chicken strips; heat through. Season with Mrs.Dash for taste. Serve with rice.(optional)
