Chicken: Oven Fried Chicken

From member LaDonna: Be sure to reduce the amount of other carbs you eat with this by a couple of tablespoons to offset the carb count found in the potato flakes.
List of Ingredients
1 cup instant mashed potato flakes, dry**
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp black pepper
1 tsp Mrs. Dash
dash cayenne pepper
4 boneless, skinless chicken breasts (about 1 lb)Recipe
Preheat oven to 375°. Combine first six ingredients and set aside. Rinse chicken breasts and then pound with a meat tenderizer until flat. Dredge breasts in potato coating and place on a non-stick or stoneware cookie sheet. Lightly spray the tops with Pam** or Crisco** spray. Bake 35-40 minutes or until juices run clear. Makes approx. 8 2oz servings.
