Chicken: Pad Thai Rice Noodles

6 oz. ground chicken breast
1 tsp minced garlic
1 tbs dried onion flakes
1 tsp garlic powder
1/2 tsp black pepper
1/4 tsp parsley
1 tsp lemon juice
1 c broccoliRecipe
Using half the bag of noodles (save the rest for later). �Boil noodles thoroughly, drain completely, and set to the side.�Rice noodles usually doesn't take more that 5-7 mins. �Keep an eye out.
Brown ground chicken (or small dices chicken breast - your preference) and add all ingredients listed. �Ground chicken doesn't take long to cook, so this makes it quick and simple. �After it's cooked measure your portion (2oz). �You'll notice that it'll shrink considerably (just like ground beef) so although you start with a 6oz measure, you'll probably end up with about 5.
Measure your noodles to 1/2 cup of carbs (or whichever your type allows) and top with cooked ground chicken. �Add steamed broccoli as a side and wa-la, great dinner meal!!
You can always add more or less spices, depending on your taste and of course choose other veggies.
