Chicken: Pad Thai Rice Noodles

6 oz. ground chicken breast
1 tsp minced garlic
1 tbs dried onion flakes
1 tsp garlic powder
1/2 tsp black pepper
1/4 tsp parsley
1 tsp lemon juice
1 c broccoliRecipe
Using half the bag of noodles (save the rest for later). Boil noodles thoroughly, drain completely, and set to the side. Rice noodles usually doesn't take more that 5-7 mins. Keep an eye out.
Brown ground chicken (or small dices chicken breast - your preference) and add all ingredients listed. Ground chicken doesn't take long to cook, so this makes it quick and simple. After it's cooked measure your portion (2oz). You'll notice that it'll shrink considerably (just like ground beef) so although you start with a 6oz measure, you'll probably end up with about 5.
Measure your noodles to 1/2 cup of carbs (or whichever your type allows) and top with cooked ground chicken. Add steamed broccoli as a side and wa-la, great dinner meal!!
You can always add more or less spices, depending on your taste and of course choose other veggies.
