    Chicken: Pineapple Ginger Chicken Stirfry

    List of Ingredients

    10 oz. boneless, skinless chicken breasts, cubed
    1 pkg of low sodium chicken broth
    1/2 c water

    3 tablespoons water
    2 cups fresh pineapple chunks
    1 pkg Splenda
    1/4 t no sodium baking powder

    2 T fresh lime juice
    1/4 teaspoon crushed red pepper flakes (or to taste)
    6 green onions, cut into 2-inch pieces
    1/4 cup minced crystallized ginger

    Recipe

    Heat a large wok or skillet over high heat. Add first three ingredients and stir-fry until brown on all sides, Remove chicken and set aside. Add pineapple,water,splenda and baking powder to wok and stir-fry until pineapple is brown and tender. Stir in the lime juice, red pepper flakes, green onions and chicken. Sauté until scallions are bright green and the chicken is fully cooked, about 15 minutes. Toss in ginger and serve over rice.
