    List of Ingredients




    4 skinned boned chicken breast halves (4-ounce)
    1 1/2 cups water
    1 cup sliced onion
    1/2 cup Chablis or other dry white wine
    1/2 cup sliced carrot
    1/2 cup sliced celery
    10 black peppercorns
    4 fresh parsley sprigs
    4 fresh thyme sprigs
    2 bay leaves

    Recipe



    Place chicken in a large saucepan; add water and remaining ingredients, and bring to a boil. Reduce heat, and simmer, uncovered, 4 minutes or until chicken is done. Remove from heat; let stand, uncovered, 20 minutes.

    Place chicken and poaching liquid in a large bowl; cover and chill.

    Notes: Microwave Poached Chicken: Place chicken in an 11 x 7 x 2-inch baking dish. Add water and remaining ingredients. Cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 7 minutes or until chicken is done. Let stand, covered, 20 minutes; chill.
