Chicken: Ragout of Chicken w/ Garlic

List of Ingredients
2 tbsp low-sodium chicken broth
20 cloves of garlic, peeled
1/2 tsp thyme
1/2 tsp rosemary
1 bay leaf
1/2 cup white wine
1/2 cup low-sodium chicken broth or water
4 carrots
9 small potatoes
2 pounds of roasted chicken breasts
1 tbsp chopped parsley
Recipe
Heat broth in large Dutch oven. Add garlic, thyme and rosemary; saute 1 minute. Add bay leaf, wine, and 1/2 cup of broth. Cover; simmer on low heat while preparing vegetables. Pare carrots; cut on a diagonal into 1-inch lengths; add to pan. Scrub potatoes; cut in half; add to pan. Cook, covered, until tender, about 25 minutes. Meanwhile, cut chicken in large strips. Add to pan 5 minutes before end of cooking time. Arrange chicken and vegetable in serving dish; garnish with parsley.
