    Chicken: Sherried Chicken & Rice

    List of Ingredients




    1 pound of boneless skinless chicken breast (cooks down to 12 ounces)
    1 12oz package of sliced mushrooms
    1 bunch of scallions (green onions) sliced thinly
    1/2 cup of sherry
    2 14.5 ounce cans of sliced stewed tomatoes (no salt added)
    dried tarragon 1tbs
    dried thyme 1tbs
    chicken broth
    1 cup rice

    Recipe



    Cut up chicken to bite size pieces and brown in a large 2qt nonstick skillet, stirring. Add scallions, and mushrooms; cook and stir for two minutes. Crush tarragon and thyme in palm of hands while adding to skillet. Add sherry, cook and stir a few minutes more. Drain tomatoes but reserve liquid. Add tomatoes. Adddd chicken broth to reserved tomato liquid to equal 2 cups; add to skillet along with 1 cup rice . Cook covered at a simmer for 30 minutes (or longer, with more liquid for brown rice)

    makes 6 one cup servings = 1/2 cup carb + 2 oz protein
