Chicken: Shish Kebab

1 pound chicken breasts, cubed
1 large red onion, sliced
2 small zucchini, slied
2 large green pepper, seeded, cut in 1" pieces
8 large mushrooms
1/2 cup lemon juice
2 tablespoons fresh ginger, minced
1 clove garlic, minced
1/4 teaspoon black pepper, fresh ground Recipe
Mix lemon juice, ginger, garlic and black pepper to make marinade. Add chicken pieces and mix well. Cover and refrigerate for 2-3 hours. Remove chjicken from marinade and add veggies to mariande to coat. Thread chicken and veggies onto 4 skewers, alternating chicken and veggies. Place skewers on grill and cook for approx. 10 minutes, turning carefully to cook on all sides.

Variations: any veggies can be used for this. For rund veggies like zucchini slices, try using 2 skewers for each kebob so the veggies don't spin as you turn them.. Try using chunks of a fish steak, like shark or tuna.
Beef Kebobs: Substitute lean sirloin for chicken; great for body types D & E.
Chicken Luau Kebobs: Thread skewer with fresh pineapple cubes, onions, chicken and green peppers.
Cajun Shrimp Kebobs: Substitute shrimp for chicken. Make marinade of 1/2 cup lime juice, 1 clove garlic, 1/2 tsp cayenne, 1/2 tsp cumin, 1 tsp thyme.
