    Chicken: Spanish Chicken & Rice

    List of Ingredients




    1 clove garlic crushed
    2 onions chopped
    1 lb skinless chicken breast diced
    2 cups water
    1 can whole peeled tomatoes (14 1/2 oz) chopped
    5 1/2 oz uncooked long grain rice
    1/2 tsp turmeric
    chili powder to taste (salt free)
    1/2 medium red pepper chopped
    1/2 medium green pepper chopped
    1/2 cup celery sliced

    Recipe



    Spray a large non-stick fry pan with cooking spray, heat and then brown the garlic, onions and chicken. Add the water, tomatoes, rice, turmeric and chili powder. Cover and simmer for 10 minutes. Add the peppers and celery and simmer 10 minutes more, stirring occasionally. Simmer for 5 to 10 minutes more or until the rice is tender. Adjust the liquid if necessary.
