    Chicken: Spanish Potted Chicken

    2 Zuccini grated
    1 egg plant finely chopped
    1 onion finely sliced
    1 cup finely sliced mushrooms
    2 cups low sodium tomato sauce
    4 Skinless chicken breasts (sliced once long ways)
    1 garlic clove minced

    Recipe

    1- In a deep skillet sear chicken on mediumto high heat untill white all over then remove.
    2- Place all veggies except tomato sauce in skillet and stir intill slightly tender.
    3- Add chicken and tomato sauce, cover and simmer on low heat 20 minutes.

    There should be a nice thick vegitable sauce. Seperate into your desired freezer bads, tubs so on then freeze. Thaw overnight in the fridge, then re-heat in a small pot on low heat.
