Chicken: Spicy Chicken Fillet

Boneless Skinless chicken breast
Instant Potato Flakes- you can also use real mashed potatos its just harder to do. when using real mix the egg with the potato.
Spices to taste
Red pepper
Paprika
Black pepper
Garlic Powder

Place egg white in a bowl and set aside. Place about one cup instant potato flakes onto wax paper and add spices to taste(any will do) You will not use all the egg and potato mixture it is just easier to coat with extra.
Beat the chichen with a meat cleaver until it is very thin 1/4 in or less. The meat will start to fall apart but that is ok. Dip the chicken in the egg the roll it in the Potato flake mixture. or if using real smash the potatos into the broken sections of meat and work a thin layer onto the breast. try not to make then very thick.
You can either pan fry in pam or cook it covered in a 350' oven till done then uncover and brown the coating (you have to flip once) If I cook them in the oven I usually use a rack.
You can also marinate the meat before coating. Sometimes I do a spice rub. These taste alot like the Wendy's spicey chicken sandwich
