Chicken: Spicy Chicken Saute

List of Ingredients
1 tbsp. chili powder
1 1/4 tsp. ground cumin
1/8 tsp. cayenne pepper
4 boneless, skinless chicken breasts
1 1/2 tsp. olive oil
1/2 cup chicken broth
1 tbsp. vinegar
8 oz. canned tomatoes, diced
4 oz. mild or hot green chili peppers, diced
1 lime, cut into wedges Recipe
Mix the three dry ingredients together. Rub 1 tablespoon of the spice mixture onto the chicken. In a skillet, warm the oil and add the chicken. Saute for 2 to 3 minutes per side. Transfer the chicken to a plate. Add the broth, vinegar and the remaining spice mixture to the skillet and bring to a boil. Boil for 1 to 2 minutes. Return chicken to the skillet. Add the tomatoes and chilies and bring to a simmer. Continue simmering for about 5 minutes, or until the chicken is cooked through. Serve with lime wedges. Serves four.
Lisa's Notes
* Do not use oil to saute chicken, use a hot non-stick pan or use non stick spray, not plan recommended.
* Look for no salt added canned tomatoes.
* Make sure chili powder has no salt.
