Chicken: Spicy Fajitas and Rice

From member RhondaS: This is a dish I made over from one of the Betty Crocker cookbooks. I made it for lunch today and it really satisfied! It also helps use up leftover rice and chicken.
List of Ingredients
2 oz diced chicken (or other protein of your choice)
1 cup sliced green/red/yellow bell peppers
1 cup sliced onion
2 tbsp fresh chopped cilantro
2 tbsp balsamic vinegar
2 tbsp water
1/2 tsp chile powder (salt free)
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp black pepper, to taste
1/2 tsp red pepper, to taste
2 pkts sugar substitute
1/2 cup any variety cooked rice
Recipe
In small bowl, combine balsamic vinegar, water, chile powder, garlic powder, oregano, black pepper, red pepper, and sugar substitute. Mix well.
Heat medium non-stick pan on medium-high heat. Toss in cilantro, chicken and vegetables. Stir fry lightly for 1 minute. Add liquid ingredients from bowl and continue stir frying until vegetables are crisp-tender. Add rice, heat through.
This recipe yields 2 oz protein, 1/2 c carb, 2 cups vegetables
