Chicken: Stuffed Chicken Breast 2

List of Ingredients
4 Chicken Breast
3/4 C Cooked Spinach
1/2 Bell Pepper Julianed
1 med Jalapeno seeded and julianed
1/2 C Chopped Onion
1 tsp Garlic Powder
1 tsp dried ParsleyRecipe
Lay out 4 foot long pieces of Plastic wrap on a free counter. Sprinkle the centers with garlic powder and parsley.
Place chicken in a gallon ziplock bag and remove the air, lay flat on cutting board or counter and pound out flat aprox 1/4 inch thin.
Lay each chicken breast on the four pieces of plastic wrap making a rectangular shape as best as possible.
Layer on Spinach, Bell Pepper, Jalapeno, and Onion.
Fold togeter the legthwise piece of plastic wrap while molding the Chicken together holding the stuffings inside. Roll ends of Plastic wrap making a tube of Chicken, wrap long ends around chicken to keep it held together.
In a Sauce pan heat 1/2 of water to simmer, place Chicken tubes in and cover let set for 30 min simmering on Med heat.
When done alow to rest out of the pan for 5 min... slice on the diagnal to show the pretty stuffing...
Instead of just plain water in the sauce pan you could use Chicken stock and add green beans and diced potato pieces to round out your meal.
