    Chicken: Tarragon Chicken w/ Linguine

    List of Ingredients




    1 pound boneless skinless chicken breast halves
    6 ounces rice linguine or other rice pasta
    1 cup defatted low salt chicken stock
    8 mushrooms, sliced
    2 carrots, julienned
    1 large onion, thinly sliced
    1/4 cup minced fresh parsley
    1/2 teaspoon dried tarragon

    Recipe



    Cut the chicken into strips 3 inches long by 1/2 inch wide. Set asiede. Bring a large pot of water to a boil. Add the pasta and cook according to package directions until just tender. Drain and set aside.
    In a large frying pan over medium heat, bring the stock toa simmer. Add the chicken and cook for 7 minutes, stirring frequently. Add the mushrooms, carrots,, ononis, parsley and tarragon. Cook until the chicken is tender, about 5 minutes. Add the pasta to the pan. Toss to combine. Heat until pasta is hot.
