4 � fresh boneless, skinless chicken breasts
Marinade:
1 �teaspoon grated lemon peel
1 �teaspoon grated lime peel
1 �teaspoon grated orange peel
1/3 �cup lemon juice
1/3 �cup orange juice
1/4 �cup lime juice
2 �tablespoons olive oil
2 �teaspoons honey
1 � habanero chile, seeded and chopped
1/8 �teaspoon ground black pepper
4 � whole, intact cilantro sprigs, roots removedRecipe
NOTE: This recipe must be refrigerated for 2 to 6 hours before being cooked.
On a work surface, put the chicken between 2 pieces of plastic wrap and lightly pound to a uniform thickness. Put into a 13x9x2-inch baking dish.
Three-citrus habanero marinade: In a small bowl, combine lemon, lime and orange peel with lemon, orange, and lime juice, olive oil, honey, chopped habanero chili and cilantro, whisking until blended. Pour over the chicken, turning to coat on both sides. Cover and marinate in the refrigerator for at least 2 or up to 6 hours.
Preheat the grill to medium and spray with cooking spray. Grill the chicken for 4 to 5 minutes on each side, or until nicely marked and cooked through. Remove to a warm platter and garnish with the cilantro sprigs.
