Chicken: Turtlemom's Chicken Marsala

1 onion
1-2 cups of mushrooms
4 chicken breasts
Saute onions and mushrooms in pan, remove when done.
Coat Chicken with:
Poultry Seasoning
Thyme
Pepper
Cayenne Pepper
(all of the seasonings are to taste - however much you want.)
Sear chicken in hot pan until done. Take Chicken out of pan, add to mushrooms and onions and reserve until later. You can cut the chicken in strips or cubes if you like.
Add to hot pan:
1/4 Red Wine to deglaze pan
1 cup water with 1 tsp beef boullion (no sodium) and cornstarch (or arrowroot powder, or oat flour).
Whisk and cook until thick. Add chicken, mushrooms and onions. Toss to coat and heat through - for about 5 minutes.
