    Chicken: Upside-Down Garlic Chicken

    List of Ingredients

    1 whole (free range) chicken
    1 garlic bulb
    cinnamon

    Recipe

    Preheat oven to 350 degrees. Wash and remove insides of the chicken. Cut off the end of the garlic bulb on both sides so the cloves are exposed. Place bulb inside chicken cavity. Sprinkle chicken with cinnamon on the inside, generously. Sprinkle cinnamon on the oustide of chicken as well. Place in baking pan, breast side down (this will keep the breasts moist). Bake for 18-20 minutes per pound, basting occasionally.
