    Chicken: Chicken in Red Wine

    List of Ingredients

    2 chicken breasts
    1-1/2 cups chicken stock
    1 shallot
    2 tsp garlic, or to taste
    1/4 cup diced mushrooms
    red wine

    Recipe

    Use a medium size saute pan. Place chicken broth in pan on high. Add garlic, mushrooms and shallots. Bring to a boil. Make sure you have enough chicken stock to come up your saute pan at least 1/3 of the way. Place chicken breast in pan. Let it cook on medium high to high until 1/2 cooked. Once the chicken is cooked about halfway, add enough wine to cover the bottom half of the chicken breast. Cook until there is about 1/2 cup of wine/broth mixture left. Remove from heat. Cut the chicken lengthwise into strips and place back in the wine mixture and saute until chicken is completely cooked.
