Italian Style Meatloaf

1 can no salt added tomato paste
1/2 c. dry red wine, plus 1/2 c. water
1 t. minced garlic
1/2 t. dried basil
1/2 t. dried oregano
12 oz. ground chicken
12 oz. ground turkey
1/2 c. uncooked oatmeal
1/2 c. shredded zucchini
2 egg whitesRecipe
Preheat oven to 350°F. Combine tomato paste, wine, water, garlic, basil, and oregano in small saucepan. Bring to a boil; reduce heat to low. Simmer, uncovered, 15 minutes. Set aside.
Combine chicken, turkey, oats, zucchini, egg whites and 1/2 c. reserved tomato mixture in large bowl. Mix well. Shape into loaf; place into ungreased 9x5x3" loaf pan. Bake 45 minutes. Discard any drippings. Pour 1/2 c. remaining tomato mixture over top of loaf. Bake an additional 15 minutes. Place on serving platter. Cool 10 minutes before slicing.
