    Recipe Introduction


    "This recipe comes from the chicken recipe exchange. It is incomplete in that the original directions don't mention adding in vegetables and whether they are cooked or not. It also called for 2 tablespoons of ground pepper which HAS to be a typo--unless you want "Pepper Fried Rice". I also cooked the chicken in the recipe. Anyway, I made it with adjustments and used frozen mixed vegetables and adjusted the seasonings. It is pretty tasty."

    List of Ingredients




    1 lb uncooked chicken or turkey, cut in small chunks
    4 cups cooked white rice, cold
    1 cup chopped onions
    1/2 c. frozen mixed vegetables (peas,corn, green beans, carrots)
    1/4 c chopped green onions, divided
    1/2 tsp fresh ground pepper
    1 tsp Mrs. Dash Garlic N Herb
    1/2 tsp ginger
    4 tbsp salt-free chicken broth, divided
    2 tsp curry powder
    1 egg white, scrambled

    Recipe



    In a heavy non-stick fry pan, combine chopped onions with 1 tbsp chicken broth. Saute until browned. Add meat and stir fry 3 minutes. Add second tablespoon of chicken broth, 3 tbsp of green onion, mixed vegetables and seasonings. Cover for 5 mins as it cooks down. Add remaining broth, 1 tbsp green onion, scrambled egg, and rice. Mix well and stir fry until heated through. (about 5 minutes.) 1 cup serving = 1/2 carb B and 1/2 C Protein B and vegetable
