2 1/2 lb. bone in chicken breast
6 cups water
2 carrots, sliced
1 pound leeks, well rinsed
2 tablespoons margarine
2 tbl. chopped fresh parsley
(original recipe called for 1 tsp salt)
1/4 tsp ground black pepperRecipe
In a large microwave-safe dish, arrange chicken in a single layer with the meatiest pieces at the edge of the dish. Add water and carrots. Microwave on HIGH 20 to 25 minutes, turning the dish every 4 to 5 minutes. Let stand 10 minutes. Remove the chicken and debone when cool enough to handle. Skim the surface of the stock. Place leeks in a bowl and microwave with margarine on HIGH 6 to 8 minutes, or until tender. Add to the chicken stock with parsley, salt, peppe and the chicken meat. Reheat before serving.
