Turkey: Balsamic Turkey w/ Snow Peas & Mushrooms

List of Ingredients
3 tablespoons balsamic vinegar
1/4 - 1/2 teaspoon dry mustard
1-2 garlic cloves, crushed
2 turkey breast tenderloins (can use chicken)
1 onion, chopped
1 cup snow peas
2 cups mushrooms, sliced
1/3 cup no salt added chicken broth
1/4 teaspoon dried thyme leaves, crumbled
Recipe
1. In a medium bowl, mix 2 tablespoons of the vinegar, mustard powder, and crushed garlic.
2. Slice the turkey breast tenderloins in half, so they are thinner, and cut into serving size pieces.
3. Add the turkey to the vinegar mixture and turn to coat.
4. Transfer the turkey and marinade to a non-stick skillet and saute the turkey a few minutes on each side, until cooked through. Transfer turkey pieces to a platter and keep warm.
5. In the skillet, heat a little chicken broth and in it saute the onions for a few minutes, then add the snow peas and mushrooms and cook for 1 or 2 minutes. Add the rest of the broth, the thyme, the remaining tablespoon of vinegar. Cook, stirring occasionally, until the mushrooms are deep brown, about 2 or 3 minutes longer. Serve the turkey, topped with the vegetables.
