Turkey: Cabbage Rolls

1 Cabbage
1lb ground turkey
1 onion
1 clove garlic
3Tb Parsley
1Tb cumin
1t cinnamon
1/2 cup lemon juice
1 cup tomato puree/sauce
1 cup uncooked rice

Makes 6 servings of 3 rolls
I like my cabbage rolls very tasty - spices can be varied according to taste.
Steam 18 cabbage leaves (about 5 mins). Chop onion finely and cook until opaque add ground turkey and brown. Drain off any fat. Add garlic, parsley, cumin, cinnamon, lemon juice, tomato puree and rice. Mix well.
Spread the cabbage leaves on a clean, flat surface. I remove a little of the core/stalks from the leaf by cutting a inverted V - i.e. ^ Place a spoonful of stuffing on each leaf, fold in the sides and roll up neatly. In a Large pot add enough water to cover about 1/4 inch at base. Place a dinner plate or small casserole dish upside down in pan and pack cabbage rolls around in a circle. Alternatively you could use several leaves on the base of the pot
Splash on a little additional lemon juice and cover with lid and cook 30-45 mins on low/medium heat ( a simmer). Make sure that enough water remains on the bottom so that it does not burn. Test after about 30 mins to see if rice is cooked.
