Turkey: Chicken Fried Steak

List of Ingredients
2 oz. ground turkey
1 egg white
1/4-1/2 C. Oat Flour (Put oats in blender)
1/2 Tbsp. Mrs. Dash
Pam ** (only if you don't have a non-stick skillet)
Recipe
Form turkey into thin patty, coat with one egg white (either dip or spread with a small brush, both sides). In a seperate bowl mix oat flour with Mrs. Dash or seasonings of your preference. Coat turkey patty with seasoned oat flour. If you do not have a good non-stick skillet spray a small amount of Pam on a hot skillet (remember, Pam is off plan and is fat, use only as a last resort). Place coated patty on skillet (medium heat) and brown each side, checking to make sure the Turkey patty is cooked all the way through before serving.
Serving Suggestions: If you used 1/4 c. oat flour you may have 1/4 C. garlic mashed potatoes (see provida menu cards for guiltless mash potatoes). Also serve with steamed veggie of your choice.
Chicken Fried Steak made with 1/4 oat flour = 2 oz. Protein B and 1/4 C Carb. B according to either Annie or Ricki, can't remember which one, you don't have to count the egg white when used for coating, like in guiltless fries, because the amount that clings to the food is small enough that it doesn't calculate. So, enjoy a down home dinner Bs and Cs.

Gravy for Chicken Fried Steak
2 Tbsp. prepared mashed potatoes
1 cup PLAIN rice milk (don't want vanilla flavored gravy.) -- this is an off plan ingredient
1/8 Tbsp oat flour
Spice to taste (I used garlic and Mrs. Dash)
Directions: In a saucepan heat mashed potatoes with oat flour until just slightly brown (like a roux). Add rice milk and spice. Sir until bubbly - if it needs to be thickened add a few more tablespoons of mashed potato. No lumps!!! Makes about three large servings.
Now you can pour that gravy over your chicken fried steak and mashed potatoes or save it for the morning and pour over Provida hash browns or whatever.
