Turkey: Chow Mein Casserole

List of Ingredients
1 lb Extra Lean Ground Turkey
3/4 C Celery, chopped
3/4 C chopped Onion
1 1/4 C water, boiling
1/2 C rice, uncooked
10 1/2oz Low-sodium chicken broth
4 oz Mushrooms, chopped or sliced (depends on preference)
1 Tbsp Sugar Substitute ( I like Splenda)
1 1/2 C rice noodles (precooked)
Soy Sauce Substitute to taste (see below)Recipe
Cook and stir meat, celery and onion until meat is cooked, then drain. Pour water on rice in a 2 QT casserole dish. Stir in meat, broth, mushrooms, noodles and sugar sub.
Cook(covered) in oven for 30 mins at 350F; stir. Cook (UNcovered) for 30 mins or longer, if necessary, serve immediately.
Note: water chestnuts and/or bamboo shoots may be added if you wish (anyone know what these count as? My guess is carb A..not sure though)

Soy Sauce substitute
2 tbs Sodium Free Beef Bouillon powder/granules
2 tbs Red Wine Vinegar
2 tbs of brown sugar Twin
1 tsp Ground Ginger
ds Black Pepper
ds Garlic Powder
1 cup Water
In small sauce pan, combine and boil gently uncovered about 5 minutes or until mixture is reduced to 1/2 cup. Store in refrigerator. Stir before using.
This is also really good on rice!!
