Turkey: Cold Poached Turkey

2 turkey tenderloins
2 tbl lemon juice
1/4 cup chicken broth, low sodium brand
1/8 tsp crushed red pepper
1 sm onion chopped
1 clove garlic minced
Recipe
* Place tenderloins, lemon juice, broth, red pepper, onion and garlic in a Dutch oven. Add just enough water to cover turkey. Heat to boiling and then
reduce heat. Cover and simmer about 30 minutes or until juices run clear.
* Refrigerate turkey in broth until cool.
