Turkey: Country Turkey Loaf

List of Ingredients
1 Êpound ground turkey
1/2 Êcup diced carrot
1/2 Êcup diced onion
1/2 Êcup chopped mushroom
1/4 Êcup diced green bell pepper
1/2 Êcup tomato sauce
2 Êtablespoons soy sauce (low sodium)
1/4 Êteaspoon garlic powder
1/4 Êteaspoon ground black pepperRecipe
Preheat oven to 350¡F. Spray a shallow baking pan with nonstick spray; set aside. In a large bowl, combine turkey, carrot, onion, mushroom, bell pepper, tomato sauce, soy sauce, garlic powder, salt and pepper; mix well. Shape turkey mixture into a loaf in prepared pan. Bake, uncovered, for 1 hour or until cooked through and starting to brown. Let stand several minutes before slicing.
Reader Comments: I did put 1/4'd potato around the edge, and also added two egg whites. D I took the suggestion of sauteing the vegetables first. I took a little bit of olive oil and cooked them for about 2-3 minutes. I also used a seasoned tomato sauce which gave the turkey loaf more flavor.
