Turkey: Egg Rolls

Purchase a pack of rice paper, it sells in a big round shape and there's probably 20 in a pack, if you can't find them in a grocery store, check a local Oriental market; they're only about $2 I think.
Anyway, I cook up some gr. turkey, then after it cools, I chop it really fine and measure (before or after). I finely chop whatever veggies I have, primarily stir-fry type veggies, and measure these out too, and add them to the turkey, so if I have 2 oz. turkey, there's enough veggies to = the protein. I add some garlic and ginger, and a small bit of chicken broth just to kinda mix everything together. I go one step further and measure out my total mixture so I know how much to put on each rice paper. You get 3 rice papers, or 3 egg rolls per meal, and I always make more than one meal's worth!
Place one rice paper in a container of water for 1/2 - 1 minute, until it's real soft; lift and let the water run off and place in front of you. Place your measured mixture on the rice paper and roll up just like a burrito - it will stick together as you go.
Be sure to place these on Reynold's Non-Stick foil (no I don't have any relatives there, but it's a lifesavor since this plan and no Pam!)
Bake them at 400 until they look rather browned and crispy. They are real crispy, and out of this world! When I reheat them in the microwave, they're very soft, and just as fabulous - the girls at work are always jealous of how good they smell and look.
I don't know how long I bake them; it's always longer than I think they should take!
