Turkey: Emeril's Spicy Turkey Sausage

List of Ingredients
2 1/2 pounds ground turkey breast meat
1/2 cup chopped garlic
2 tablespoons chopped fresh parsley
4 tablespoons paprika
2 teaspoons cayenne
2 teaspoons ground cumin
1 teaspoon crushed red pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon fresh ground black pepper
2 teaspoons onion powder
1/2 teaspoon garlic powder
Recipe
Mix all spices together in a small bowl. Add garlic and mix well. Place gruond turkey in a large bowl. Add spice mixture and knead into turkey until well mixed (this will take up to 5 minutes). Divide turkey into 18 equal pieces, rolling into balls. Using an indoor grill, place balls on the grill about 2 inches apart. Flattent he balls with the grill lid as yoou close it. Grill patties until cooked thoroughly, about 6-8 minutes, dependingo n thickness. These freeze well. Makes eighteen 2 ounce patties.
