Turkey: Jordee's Turkey Stroganoff

Recipe Introduction
"This dish is supposed to be a substitute for Beef Stroganoff. I did not find any similarity to it. When made as shown, the end result is chicken chunks with a tomato mushroom sauce. The only spice used is paprika , so you know Chef Jordee had to doctor it up!
I added a bay leaf, oregano, curry, ground pepper, and basil. I also used half chicken breast and half turkey breast. The TURKEY was way more flavorful and moister, in my opinion. I served it over rice. Noodles would also be a nice option. I also recommend adding 2 cups of cauliflower or other veggie to make a complete all in one meal. It makes 6-- 2 oz servings of protein. Just put your freezer container on the scale and weigh it, and then add 2 oz of meat to each. Then give each a ladle of sauce/veggies until gone"
List of Ingredients
1 onion diced
3 large garlic cloves, minced
3 skinless chicken or turkey breasts (16 oz), cut in strips
2 tbsp tomato paste (low salt if you can find it)
1 tbsp paprika
1 large bay leaf
1/2 tsp each oregano, basil, curry
1/4 tsp fresh ground pepper (or to taste)
1 1/2 c low sodium chicken broth
2 cups frozen cauliflower (optional)Recipe
Saute onion and garlic in good non stick pan over medium high heat. Add chicken strips and brown. Add paprika and tomato paste and stir until chicken is coated. Add mushrooms, seasonings, broth, and optional cauliflower. Bring to a boil and then simmer for 20 minutes. Serve over rice or rice noodles.
